Chicken Chalupa. Fantastic chicken enchilada recipe with lots of cheddar and Monterey Jack cheeses, olives, corn, diced green chilies, diced green onions, sour cream, and cream of chicken soup.
Ingredients
2 pkgs. medium flour tortillas
4 large whole chicken breasts, cooked and diced
2 cans cream of chicken soup
1 pt. sour cream
lb. Monterey Jack cheese, grated
lb. cheddar cheese, grated
1 cup sliced, ripe olives
cup green onions, chopped
1 large can green chilies, undrained
1 can whole kernel can, drained
