Ingredients
1 large onion, peeled and chopped finely
2 tbsp butter
6 English muffins (1 package), cut into 1/2-inch cubes
About 12 oz Canadian bacon or cooked ham, cut into 1/2-inch cubes
10 large eggs
2 cups milk
1/2 tsp kosher salt
2 tsp dried thyme leaves
Hollandaise sauce, for serving
Minced fresh chives, for garnish
Fresh thyme sprigs, for garnish
